Eggplant ‘Manicotti’ – Sunday Treat Meal

Two weekends ago we were so excited about Episode 6 of Game of Thrones (still can’t believe that this show is really over) that we decided to go all out with a warm Italian home cooked meal and some wine. It paired perfectly with all of the wine drinking in the show 😉 Also, there’s something about the smell of a home cooked meal that just warms the house and really adds to your Sunday festivities. Rather than fill ourselves up on something breaded or carb heavy like pasta or chicken parm, we tried a healthy spin on one of our favorite dishes: Manicotti.

While eliminating the carb aspect, we still wanted to give ourselves a little treat and indulge in some way, so we added in some cheeses and chicken sausage. We didn’t follow any sort of recipe, it was kind of just on a whim and throwing together ingredients, hoping for the best. Thankfully, it turned out delicious! We ate just about the entire tray, but hey its Sunday AND the series finale of Game of Thrones so no judgments, right?

This recipe was super simple and super easy.  We are all about the recipes that require only one bowl or one pan, especially during meal preps for us and the pup! We diced up some Applegate’s organic Italian chicken sausage and tossed that into a large mixing bowl with cottage cheese, shredded mozzarella, oregano, garlic powder, salt, pepper and a dash of parmesan cheese. Next, we thinly sliced the eggplants creating a ‘lasagna noodle’ like strip. After coating the bottom of the baking dish with Trader Joe’s Marinara Sauce, we placed a dollop or two onto each slice of eggplant and then folded it up. We lined them up in the dish, which made about 12, sprinkling with extra sauce, parmesan and mozzarella and baked at 400° for about 15-20 minutes and ate it immediately after, followed by some dark chocolate 🙂

 

 

Next time we’d probably use ricotta cheese instead of the cottage cheese for a creamer filling, but that was all we had on hand at the time and it did the trick!

 

Stuffed Manicotti & a little vino🍝👨🏻‍🍳🍷.
• 1-2 Large Eggplant
• 1/2 package Italian Chicken Sausage
• 3/4 cup Cottage Cheese
• 1/4 cup Shredded Mozzarella, for topping.
• 1 1/2 cups Sugar-Free Pasta/Marinara Sauce.
• 1/2 cup Parmesan Cheese, 1/4 for the filling, 1/4 for topping.
• Oregano, dash
• Garlic Powder, to taste
• Salt, to taste
• Pepper, to taste
