Peanut butter. Pie. No ovens, less than 8 minutes to make. Need I say more?
We rated this peanut butter pie at 4 out of 5 stars. We felt that it definitely could have used less bananas and had more of a peanut butter flavor. It was also a little too airy for our liking, so I think next time I would add in a little coconut milk to thicken it up! And maybe, just maybe toy around with the idea of subbing Almond Butter for the Peanut Butter. However, we chose this for a dinner party with friends and it was a hit!
The recipe was great on its own, but we decided to add a dark chocolate drizzle after tasting a little piece of it (it looked too delicious to not steal a bite before our friends arrived, oops). We felt that the chocolate tied it all together and added a little extra oomph to it.
We followed @ChocolateCoveredKatie’s recipe. However we changed a few things.
– We added the dark chocolate drizzle by melting down dark cocao nibs and drizzling it on with a spoon.
– We added about 1/2 cup almond milk because it was just too thick and airy and didnt produce enough ‘filling’ for the pie.
– We used our own vegan, gluten free chocolate pie crust from GreenLifeMarket (I don’t remember the brand, sorry!)
– We also omitted all of the stevia/sugar that the recipe called for. It may have added a different flavor but we felt that it was sweet enough without it and we wanted to stay paleo with our dessert for the evening.
